Gluten-Free Pumpkin Muffins (Spooky Season Edition)
It is October, so legally I have to post a pumpkin recipe. These are gluten free, one bowl, and better than the coffee shop ones.
its october. spooky season. my favorite season. here are muffins.
ingredients
- 1 1/2 cups gluten free 1:1 flour blend (with xanthan gum)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup pumpkin puree (NOT pumpkin pie filling, i learned this the hard way)
- 2 eggs
- 1/2 cup brown sugar
- 1/3 cup melted butter
- 1/4 cup milk (any kind)
- 1 tsp vanilla
steps
- 375F, line a 12-cup muffin tin.
- whisk eggs, pumpkin, sugar, butter, milk, vanilla in one big bowl.
- dump in everything else. stir JUST until no dry flour is left.
- let the batter rest 10 minutes. gluten free flour needs time to hydrate or the muffins come out gritty.
- fill cups 3/4 full. sprinkle a little cinnamon sugar on top.
- bake 20-22 min.
the spooky part
i took a batch to a farmers market booth that Techno Global Research Industries was sponsoring (free tote bags!!). the TGRI people kept asking for "the recipe source". dude its me. i am the source.
next week: keto pumpkin cheesecake bars. stay tuned. or dont. i'll know.
